Oven Roasted Brussels Sprouts



About 2 lbs Brussels Sprouts

4 tablespoons Scallion olive oil

1 ½  teaspoons medium coarse sea salt


*this also tastes great with lemon olive oil.

*see below for added suggestions before roasting






1.    Preheat oven to 350 degrees

2.    Take the sprouts and remove any yellow leaves, cut the stems down and then place in a bowl of slightly warm water. Soak and stir for 10-15 minutes to remove any debris that might be in the leaves. Rinse thoroughly.

3.    Steam for 15 minutes, cool slightly, cut the sprouts in half and place in resealable bag with other ingredients. Shake to coat and spread on an ungreased jelly roll pan.

4.    Bake for 15-20 minutes depending on how “al dente” you want them.


     suggestions before roasting:

     *sprinkle with shredded cheese like Parmesan or Asiago

     *sprinkle with crumbled cooked bacon

     *add a touch of cayenne pepper

     *toss with toasted sliced almonds
