Persian Lime Olive Oil Cookies

 Olive Oil Oatmeal Cookies



3/4 cup Persian Lime olive oil

1 cup white sugar

1 cup golden brown sugar

2 eggs

1 teaspoon vanilla extract

2 cups flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground cloves (may omit or reduce to ¼ t)

2 cups quick cooking oats


medium-coarse sea salt to sprinkle on top, (our ginger sea salt works great) approximately ½ tablespoon



1.    In large mixing bowl, cream together olive oil, white sugar and brown sugar. Beat eggs in 1 at a time, and then add the vanilla. Combine dry ingredients except salt and stir into creamed mixture. Add oats, cover, refrigerate for at least an hour.

2.    Preheat oven to 350 degrees. Roll into oversized tablespoon and place 2 inches apart on lightly greased cookie sheet. Flatten with fork or the bottom of a drinking glass. Sprinkle with a pinch of sea salt.

3.    Bake approximately 10 minutes, allow to cool on cookie sheet another 5minutes then transfer to wire rack to completely cool.
